  • Paneer is made from whole milk. By adding an acid, for example lemon juice or vinegar, the milk will curdle. The solid particles separate from the water. No rennet from the abomasum of a calf is used in the preparation of this cheese. That makes paneer suitable for vegetarians, more specifically Indian Hindus who because of their religion can not eat cattle.
  • Tahoe / Tofu A protein-rich alternative to meat made from soyabeans. Tahoe the Indonesian name, Tofu is the Chinese name. Because the preparation of bean curd resembles the process of making cheese, bean curd is also called ‘soya cheese’.
  • In Asian countries it has been known for more than 2000 years because it has an extraordinary nutritional value and very versatile. You can best describe it as soft and a bit cheesy. It is also made from soya milk with rennet (just like cheese). The taste is neutral. The strength is that it easily takes over the taste of other ingredients. For example, you can marinate well.
